Hi guys I am currently completing my fourth year at UofT undergrad and I was contemplating dropping one of my courses in my final year as I took two extra credits last summer (3rd year). Would law schools find out about this? Are uncompleted courses on our submitted transcripts? I think I would be fine with requirements as I have two extra .5 credits (half year courses at UofT) and would be dropping just one .5 credit from my fourth year course load which is currently full - 5 full credits. Would anyone advise against this? Please let me know!

Whether or not it's on your transcript changes from school to school. Most schools have a drop date, before which you can drop without penalty, but after which it will appear. Check with the registrar at your own school.

I can still drop the course without penalty so if i only took 4.5 credits this year but took a total of 6 last year i would still be okay for the 60 hour credit for best two? (specifically referring to Osgoode's best two)
